Crepes are a favorite in our house. We have branched out from sugary fruit and yogurt to savory egg and cheese. We occasionally have crepes for dinner as well. I'm frequently on the look out for more yummy ways to fill a crepe, but this recipe is great for whatever filling we put inside.

Ingredients
1 1/2 cups
milk
1 1/2 cups
flour
1/2 teaspoon
baking powder
1/2 teaspoon
salt

eggs
1/2 teaspoon
vanilla
2 tablespoons
butter, melted
Instructions
Mix all ingredients in a blender until well combined. Pour a scant 1/3 cup batter in a 10 in skillet and roll the batter around the bottom of the pan. Cook until light brown, about 1 minute. Flip and brown other side, about 30 seconds. Eat the first one or two that don't come out right and keep trying until you master your technique.
To layer multiple crepes after cooking, or to precook and serve later, layer a piece of wax paper between each crepe so they don't stick together.

Instructions
These are some of our favorite sweet toppings for crepes. Sometimes getting all the toppings together takes as long as making the crepes, so be prepared. Check in breakfast sauces for some yummy recipes.
We haven't been a big fan of puddings, but we love Bavarian cream when I buy it at the specialty kitchen store (Orson Gygi's for the win).

Sometimes we want more protein for breakfast so these have now been included in our crepe options. The beauty of crepes is that they are easy to create your own. All savory options are cooked and ready to be warmed up inside the crepe (put in filling, fold in half, and put back in pan for 30 seconds per side or until cheese is melty).
